Sheep’s milk is naturally high in B vitamins including Folic acid and B12. It is also high in Vit A and D, Potassium and Zinc, all providing us with health benifits. The fats and proteins are also easier to digest than cows milk and it is recommended for Asthma and Eczema. Cais na Tire cheese is manufactured onsite 2-4 times a week by Lorraine and Barry. The milk is pasteurised and cultures, lysozyme and rennet are added. After the milk coagulates, it is cut to seperate the curds and whey. The curds are placed and pressed in moulds. The cheese is placed in a brine before being dried and coated. It is stored in the ripening rooms for 6-9 months to allow the flavour to develop . It takes 7 litres of sheep’s milk to produce 1kg of cheese compared to 11 litres of cows or goat’s milk. This is because sheep milk contains higher solids. Sheep however only produce approx. 300 litres of milk in a year compared to 5000 litres from a cow!
