The pupusa, a humble food deeply rooted in Byron's Mayan heritage, has been a culinary tradition for nearly 2,000 years. These stuffed corn tortillas, requiring hours of preparation, are a labour of love. Simply put, pupusas are flat puffed corn tortillas stuffed with a variety of fillings, each one offering a burst of flavour that reflects the rich culinary diversity of Latin America. Inspired by this traditional dish, Byron's curiosity and passion for Latin American cuisine grew, leading him to explore and appreciate its variations throughout the region. From Venezuela's Arepas to Mexico's Tacos and Argentina's Empanadas, all corn-based and stuffed with delicious ingredients, Crazy Corn brings these authentic flavours to the heart of Galway.
