The Dough Bros Celebrate 10 Years of Pizza Excellence

What started as an idea over a few pints has grown into one of the best pizzerias in the world. The Dough Bros, a Galway institution known for its wood-fired pizzas, recently celebrated its 10th anniversary, and owners Ronan and Eugene Greaney took a moment with us to reflect on their journey from a food truck to international fame.

The idea took hold at a time when the two brothers were navigating stormy waters. Eugene, fresh out of a job, and Ronan, eager to build something of their own, decided they would open a pizza truck. 

The seed was sown for The Dough Bros, and they hit the road, slinging pizzas from Gort to Gleno. But it wasn't long before they needed a permanent spot, and that’s when a café on Abbeygate Street with a wood-fired oven became their first brick-and-mortar home.

With their family and friends rallying around them to help decorate with everything from football jerseys to old Nintendos, the pop-up was born. Ronan even packed his bags and headed off to the Associazione Vera Pizza Napoletana in Naples to get a first-class education in Neapolitan pizza-making. 

As their venture continued, the brothers moved to their current location on Middle Street and have their original food truck permanently located at O'Connell's beer garden in Eyre Square. You'll often find queues out the door to sample a taste of their delicious menu.

The moment of true recognition came when The Dough Bros were named the best pizzeria in Ireland, not just once, but twice, at a prestigious event in Naples. They also found themselves ranked as the 15th best pizza spot in the world—a massive achievement for the Galway entrepreneurs.

Reflecting on the journey, Ronan shared how meaningful their 10 year celebration was:  

"Standing in this room now, looking around at all the familiar faces—from customers to suppliers, producers, staff, family, and friends—it's been amazing, honestly. It's been a wild ride over the ten years. We often don't get time to look back, but over the last week, preparing for this celebration, it’s given us a chance to reflect. There have been so many highs and lows, but it's been an amazing journey, and we’re loving every bit of it."

For Eugene, the night was more than just a celebration—it was about bringing people together:  

"If you knew the stress behind the scenes trying to pull this off, there's a few stories to be told—though maybe not for now," he says with a smile.

"It all came together on the day, from the quality of food to the amazing pizza chefs. The crowd has been lovely, the energy in the room electric. No backups, no delays—the after-party is going to be a big one!"

Looking to the future, The Dough Bros are set to launch their retail pizza bases in Dunnes Stores, but for now, they’re soaking in the success of the past decade.

Ronan puts it simply: _We’ve had tough conversations, made tough decisions, but at the end of the day, it’s about what’s right for the business. And who knows what’s next—we've got some exciting projects coming up."

From a wild idea over a few pints to an award winning venture, The Dough Bros' story is one of persistence, and pride in the west of Ireland.
