As part of our Plan B series of articles to get you through the coming weeks we are gonna send some recipes your way to try at home. It took a lot of negotiation but in light of current events, we finally got one of the team to spill the beans on their delicious chilli recipe. It’s best to make a big batch as this stuff is superb after a day or two in the fridge. 
Not just any tinned tomatoes will do. 
To get this chilli right, you MUST use excellent, whole, tinned tomatoes. Use Cirio Pelati Peeled Plum Tomatoes to really nail this, they are available in most supermarkets. If you can’t find them, do try to get whole peeled plum tomatoes, not chopped, it really does make a difference.

Ingredient list 
2 tbsp Chilli Powder - preferably hot
1 tbsp Ground Cumin
4 - 12 Birdseye Chillis, Little Hot Ones. 
2 Cloves Garlic - finely chopped
1 Large Onion - finely chopped
2 Beef Stock Pots or Cubes
2 Tins of Cirio Pelati Peeled Plum Tomatoes
2 tbsp tomato puree
3lbs Minced Beef - preferably steak mince
Fresh Corriander
Spring Onion
Milk

Who's taking the Horse to France? - This needs butter and plenty of it. 
Step 1. 
Put that beef in a bowl and cover it with milk, it’s not pretty, but it breaks down and tenderises the beef, it really makes this chilli special. 
Step 2.
Get the knives out and finely chop your onion, garlic and spring onion, leave these to the side for now. 
Step 3. 
Put a DRY pot, no oil or butter, on medium heat and add your chilli powder and cumin. Heat these in the dry pot until you really get that spicy smell, it will be strong, that’s what you are after. 
Step 4.
Lower the heat a little and add lots of butter, this is not a diet dish, go for 100g to 120g. Add the chopped garlic and onion and cook these on a low heat for 6 to 8 minutes. Keep the heat low here and don’t rush it, this is where the magic happens. 
Step 5.
Drain the milk from the minced beef and add the beef to the pot, stir in vigorously with the onion, garlic, butter and spices. Keep over medium heat for about 3 to 4 minutes. 
Step 6. 
Blend the tins of tomatoes, half fill one of the empty cans with water, add the stock cubes and fire that in with the tomatoes and two birdseye chillis for another blitz in the blender. Add this to the pot and stir on a medium heat for 5 minutes. 
Step 7. 
NO KIDNEY BEANS - THEY ARE STRICTLY FORBIDDEN 
Step 8.
Simmer for 30 minutes stirring regularly. Taste and season with salt and black pepper. Adjust the spice level with some more chopped chilli, chilli is best-served roaring!

Step 9.
Add one square of plain dark chocolate, Lindt Excellence 85% cocoa is best. Let this melt in and give it another stir and throw in one more knob of butter to finish it off. 
Serve with a sprinkling of spring onion, fresh chilli and coriander on top with some crusty bread for dipping.
